Mushroom Ramen Bowl

Description of the meal: Rich, umami-packed, and comforting, this plant-based ramen features sautéed mushrooms, noodles, and a F.U.B.A.R. broth that delivers depth and heat in every spoonful.

Ingredients:

  • 4 cups vegetable broth

  • 2 tablespoons miso paste

  • 1 tablespoon soy sauce

  • 1 tablespoon sesame oil

  • 1 tablespoon, F.U.B.A.R.

  • 2 cups sliced shiitake mushrooms

  • 2 packs ramen noodles (discard seasoning)

  • 1/2 cup chopped green onions

  • 1 soft-boiled egg (optional)

  • Nori strips and sesame seeds for garnish

Instructions:

  1. In a large pot, heat sesame oil and sauté mushrooms until browned and tender.

  2. Add vegetable broth, miso paste, soy sauce, and F.U.B.A.R.. Simmer for 10 minutes.

  3. Cook ramen noodles separately according to package instructions, then drain.

  4. Divide noodles into bowls. Pour hot broth over the noodles and top with sautéed mushrooms, green onions, and soft-boiled egg (if using).

  5. Garnish with sesame seeds and nori strips.
